I love my Casserole Crock Pot. It’s a 9×13 inch crockpot (3.5 quarts) that’s programmable just like the regular oval shaped slow cookers. This shape and style crock pot is perfect for all types of casseroles just like this Slow Cooker Breakfast Casserole.

Ever since I purchased my casserole crock pot, I’ve been looking for 9 x 13 Crock pot recipes. It’s fun to modify existing recipes to fit this sized slow cooker.

My sister hosted a brunch for my nephew’s birthday, and I seized the opportunity to create this Casserole Crock Pot Hash Brown Breakfast Casserole. It turned out to be a big hit with the entire family, kids and adults alike. I also love to make this for Christmas morning.

Crockpot Sausage Breakfast Casserole

The casserole consists of layers of all my favorite breakfast ingredients – hash browns, breakfast sausage, bacon, cheese and eggs.

Substitute any of your favorite breakfast ingredients in this recipe! Try switching out the shredded cheese with something fancy like Gouda, or keep it classic with cheddar. Use sausage links instead of ground sausage or use up some leftover ham. Add onions, peppers or other veggies. The options are endless.

I might even try topping my loaded breakfast casserole with fresh tomatoes.

How To Make Crock Pot Hash Brown Breakfast Casserole

Step by Step Instructions

  1. Spray the casserole crock pot insert with nonstick cooking spray.
  2. Layer half of the frozen hash browns, cooked and drained sausage and bacon chunks, and shredded cheese. Repeat with second half.
  3. Whisk eggs, milk, seasoned salt, pepper and paprika.
  4. Pour egg mixture over layers of the hash brown and breakfast meat mixture.
  5. Cover and cook on high for 3 to 4 hours until set or on low for 7 to 8 hours.

Can I Put Frozen Hash Browns in the Crock Pot?

Yes, hash browns can be kept frozen up to the point of putting in a crock pot casserole.

For cheesy potatoes or hash brown casserole in the crock pot, mix the frozen hash browns with the other ingredients such as cream of chicken soup, cheddar cheese soup, sour cream, melted butter, etc., and then cook on low for approximately 6 hours. Here’s an easy frozen hash brown recipe to try!

Recipe Variations

  • Mushrooms, peppers, green onions, zucchini, or any other vegetables are a great addition.
  • Think outside of traditional cheddar cheese. Any type of cheese works.
  • For more flavor, add garlic powder, onion powder, paprika, red pepper flakes, dry mustard, etc.

  • 30 ounces frozen shredded hash browns (you might not use the entire bag)
  • 1 pound breakfast sausage, cooked and drained
  • 5-6 slices bacon, chopped into pieces, fried and drained (or Canadian bacon or ham)
  • 2 cups shredded cheese your favorite type
  • 8 eggs
  • 3/4 cup milk
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  • Spray crock pot insert with nonstick cooking spray.

  • Layer half of frozen hash browns, half of sausage and bacon (cooked and drained), and half of the cheese. Top with remaining half of each. You might not be able to fit the entire bag of hash browns.
