We LOVE rice bowl recipes, but this beef bowl recipe is especially a fave of mine because it's so EASY to make! Like my BBQ Brisket Sandwich, this beef bowl recipe uses leftovers from my Slow Cooker Beef Brisket, so all I have to do is start the rice and saute some mushrooms, peppers, and onions and then assemble the beef bowls. Literally, this takes 20 minutes to get on the table!

Another reason to love this beef bowl recipe is the taste and texture! TenderCertified Angus Beef®brandbrisket dripping in a tangy homemade bbq sauce is delicious served over rice.

You could stop there and be happy as a basket full of puppies, but go ahead and saute the vegetables while the rice is cooking to round out the meal and add that extra layer of deliciousness and crunch of fresh veggies. Low Carb Alternative

For a low carb-ish alternative substitute cauliflower rice in place of regular rice. I've done this and it is delicious. The BBQ sauce with the brisket is not exactly low carb but everything else is, so that's why I call it low carb-ISH.

Serve up a deliciously satisfying dinner easily with this Beef Bowl Recipe. Leftover BBQ slow cooker brisket and fresh sauteed vegetables are served a top a bowl of rice and makes an easy dinner recipe everyone will love!

ingredients:


  • 2 tbsps unsalted butter
  • 1 cup white mushrooms, sliced
  • Pinch of salt and pepper
  • 1/2 cup yellow onion, sliced
  • 1/2 cup green pepper, sliced
  • 2 cups cooked rice, white or brown rice - refer to note 1 & 2
  • Leftover BBQ brisket - refer to note 3
  • Fresh cilantro leaves for garnish

instructions


  1. Prepare rice as directed on package.
  2. While rice is cooking, in a skillet over medium heat saute 1 cup mushrooms in 2 tbsps butter with a pinch of salt & pepper until the mushrooms begin to soften.
  3. Add 1/2 cup sliced onions & 1/2 cup sliced green peppers to skillet with mushrooms. Saute until veggies are tender crisp. Give the mixture a taste. Add salt & pepper as needed.
  4. Divide cooked rice evenly into 4 serving bowls and top each with veggies and shredded bbq brisket. Garnish with cilantro. Enjoy!

NOTES:
